Creative Meals for a Cleanse Day, 5

Day 5 Friday – I’m settling into cleansing. My thoughts are focused on creating interesting fruit and vegetable meals instead of feeling disappointed that comforting oatmeal isn’t on the menu right now.

 Breakfast – Sweet Potato “toast”, yesterday’s smoothie

The sweet potato was cooked in a frying pan with a couple tablespoons of water. Cooked until it was slightly crispy with sprinkles of cinnamon and clove. I recommend it! It was filling, fun, sweet, with just the right amount of crispiness.

Lunch – Homemade veggie soup pureed with fire roasted tomatoes and carrots

Needing to add some life to my veggie soup, I transformed it into a hearty tomato soup by blending the soup with the tomatoes. The soup was tasty because of the fire-roasted tomatoes and surprisingly filling. Another creative dish I will make again.

A healthy day of eating is empowering both physically and mentally. I continue to be surprised at how little I need to eat to feel satisfied. I won’t kid you, it’s a bit challenging to continually shift my focus toward only fruits and vegetables!
